Dicarboxylic organic acid naturally present in grapes and other fruits, commonly obtained from winemaking residues. It is used as an acidulant, pH regulator and metal chelator, with a synergistic antioxidant effect. It is common in beverages, confectionery, baking powders and effervescent formulations.
